February 2017- Cooking with Rum
Decadent Chocolate Biscuits
Hmmm, chocolate, everyone either is or knows someone who is in love with it. How many other things come to mind, that can so easily turn a bad day into a good one? Very few indeed! Here is a super simple recipe that can turn an average dessert into a memorable one! It pairs perfectly with aged rum too!
Ingredients:
• 100 gr Self Raising Flour
• 25 gr Cocoa Powder
• 50 gr Caster Sugar
• 100 gr Butter
• Vanilla Essence to taste
• 2 Cups Chocolate Buttercream
• Icing sugar for dusting
Instructions:
Preheat oven to 350 F
Grease a baking tray.
Sift the flour and cocoa powder into a small bowl and set aside.
Using an electric whisk, cream sugar and butter together until light and fluffy.
Stir in the flour and cocoa to form stiff paste, add vanilla essence to taste.
Roll the mixture into 16 balls the size of a walnut and place on a baking tray.
Flatten the balls with a fork dipped in cold water and bake for 10 minutes. Allow to cool on a wire rack.
When the biscuits are cold, sandwich together with buttercream and dust with icing sugar, or you may brush the tops of the biscuits with chocolate frosting (see recipe below). Serves: 6-8 sandwiched together.
Easy Chocolate Frosting
4 tablespoons butter
• 1/2 cup packed brown sugar
• 2 tablespoons milk
• 1 1/2 cups confectioners’ sugar
• 1 tablespoon unsweetened cocoa powder
• 1 teaspoon vanilla extract
In a saucepan, melt butter and brown sugar over medium heat. Stir until sugar is dissolved, then add milk. Bring to a boil and remove from heat. Sift together cocoa and confectioners sugar. Blend into butter mixture and add vanilla. If consistency is too stiff, add more milk. Spread quickly over cooled biscuits, as frosting will set up very fast.
