Seafarers up and down the East Coast of North America have always worked hard and risked their lives to make a living. Gordon Stevens was a Rum Runner from Cape Breton in the 1920’s and his wife used some of his illicit cargo to make delicious golden cake baked with rich, sweet rum. One day, not so long ago, we stumbled across the recipe for this delicious concoction and now it’s available to you without the risk of incarceration. Review of Rum Runners Rum Cakes:
Traditional Rum Cake: The outer color is light golden, the texture is firm, has rum soaked pecans and coconut flakes on top. The aroma has notes of vanilla and ripe banana, the sweetness level is medium, moisture content is medium.
Chocolate Rum Cake: The color is dark mahogany, very brownie- like, with toasted coconut flakes on top. The texture is dense, the aroma is that of dark cocoa. The moisture content is low, but the chocolate flavor comes through very authentically. Very nice cocoa, could use a bit more rum!
