August 2018- Cooking with Rum
This month the “Got Rum?” team is focused on Coconuts! So here is a delicious creamy coconut shrimp recipe paired up with coconut rice. Enjoy!
Spirited Creamy Coconut Shrimp on Coconut Rice
Ingredients:
2 Tbsp. Olive Oil
1 C. Chopped Green Onions
1 tsp. Curry Powder
¼ tsp. Crushed Red Pepper
10 oz. Can Light Coconut Milk
¼ C. Dark Heavy Rum
1 ¼ Pound Medium Shrimp, peeled and deveined
½ tsp. Salt
1 Lime, quartered
¼ C. Chopped Fresh Cilantro
Directions:
Add olive oil to a large nonstick skillet over medium-high heat; add green onions, curry powder and crushed red peppers. Sauté for about 2 minutes.
Add coconut milk, rum, shrimp and salt; cook over medium heat 7 to 8 minutes or until shrimp are done, stirring occasionally. For extra rum flavor, add an additional 1/4 cup of rum at the very end when shrimp are cooked and turn off the heat.
Place 3/4 cup of Coconut Rice (recipe below) on each of 4 serving plates; spoon shrimp mixture evenly over rice. Squeeze 1 lime quarter over each serving and sprinkle with chopped cilantro.
Coconut Rice
Ingredients:
1 tsp. Coconut Oil
1 C. White Jasmine rice
1 13.5 Oz. Can of Light (or low fat) Coconut Milk
Zest of 1 Lime
Juice of half a Lime
Salt to taste
Directions:
In a small sauce pan over medium high heat, saute the rice in the coconut oil for just 1 minute. Pour in the can of coconut milk and stir to combine. Bring to a boil, cover with a lid, and reduce heat to low. Simmer the rice covered for 35 minutes. Remove from heat, and allow to sit with the lid on for another 10 minutes.
Remove the lid, fluff the rice with a fork, then stir in the lime zest, lime juice, and salt to taste.
