July 2018- Cooking with Rum
Summer is officially here so get your pool gear ready, prepare some refreshing cocktails and fire up that grill! Enjoy this summer with this amazing ribeye steak and side of corn that is sure to have your family and friends begging for more. Bon Appetit!
Hawaiian Ribeyes with Rum Chutney
Ingredients:
4 Ribeye Steaks, well marbled and cut 1 to 1.25 inch thick
2 Cans Pineapple Juice
½ Cup Teriyaki Marinade & Sauce
¼ Cup Myer’s Jamaica Rum (or Coruba Jamaica Rum)
Chutney ingredients:
½ cup of a blend of diced dried fruits: pineapple, mango, papaya
1 Cup Gold or Dark Rum
Directions:
The day before: In a container, put diced dried fruit and add the rum. Allow for fruit to soak the rum.
Also the day before: place the ribeye steaks in a large Ziploc bag, may have to put two steaks per Ziploc depending on size of steaks. Pour the pineapple juice, Teriyaki sauce and rum.
Place the steaks in the refrigerator overnight, turning the steaks once to ensure even contact with the marinade.
Day of grilling: once grill is ready (hot enough to sear on contact), remove the steaks from the marinade and place them on grill for 2 minutes on each side. Gently grill each side of the steaks, return steaks to marinade and then back on the grill and cook to your liking.
Serve the rum-soaked dried fruits on the side, enjoy your steaks!
Spirited Corn-on-the-Cob
Ingredients:
4 Large Corn Ears, leave husk
½ stick Melted Butter
¼ Cup Dark Rum
Optional: Chili powder or Sweet Hungarian Paprika
Directions:
Soak corn ears (with husk) in water prior to putting on the grill. Husk will keep the corn-on-the-cob from drying. Place each corn-on-the-cob on the grill and cook each side for 3 to 4 minutes and remove from direct heat allow to continue cooking on the top rack.
When ready to serve, remove husk and add the blend of butter and rum to each ear. Optional: sprinkle a little chili powder or Paprika for an extra kick.
